Instructions:
- Prepare the Teriyaki Sauce:
- In a small bowl, whisk together soy sauce, mirin, honey or brown sugar, rice vinegar, sesame oil, minced garlic, and grated ginger.

- Stir-Fry the Chicken and Vegetables:
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the sliced chicken to the skillet and cook until no longer pink and cooked through. Remove the chicken from the skillet and set aside.
- Sauté the Vegetables:
- In the same skillet, add another tablespoon of vegetable oil if needed.
- Add the sliced onion and minced garlic. Sauté for a minute until fragrant.
- Add the mixed vegetables and stir-fry for 3-4 minutes until they begin to soften but remain crisp. Season with a pinch of salt and pepper.
- Combine Chicken and Vegetables:
- Return the cooked chicken to the skillet with the sautéed vegetables.
- Add the Teriyaki Sauce:
- Pour the prepared teriyaki sauce over the chicken and vegetables. Stir well to coat everything evenly.
- Finish and Serve:
- Continue cooking for another 2-3 minutes until the sauce thickens slightly and coats the chicken and vegetables.
